Homemade pitas are probably my favorite parve recipe. They taste better than anything you could buy at the store. I love that they are very soft-not hard and crunchy like the ones you get at the store. I don’t think there is anything better than fresh baked bread.  I love making a huge batch of homemade pitas because I can use them throughout the week for lots of different meals.  Most bread recipes are also parve recipes, so they are extremely useful for lots of different meals. A regular batch makes about 20 pitas.  The downside is that they take a pretty long time to make.  It does take lots of planning and you should get these started early.   These homemade pitas rise pretty well in the Texas heat which is an added benefit.  The kitchen can get pretty hot though, so definitely make them early.  Homemade pitas also make an excellent kosher appetizer.  You can make a batch big enough to serve large groups.  Serve them up with some homemade hummus and people are sure to be impressed.
